1 1/2 cups rice flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 egg
3/4 cups sugar ( I used about a 1/2 c agave nectar instead)
1 medium shredded zucchini (I just used a cheese grater)
1/2 c canola oil (or applesauce)
Heat oven to 350. Mix dry ingredients together. Mix the rest in another bowl then stir into the flour mixture. Spoon the batter into 2 5" mini loaf pans (spray with pan spray first). Bake for 35 to 40 minutes.
It was incredibly easy to make and the kids loved it. An easy way to get veggies in.
